Mogote is a triangular cut located directly
in front of the loin.

The meat has a dark red colour, limited external fat
and visible intramuscular marbling.

Its balance of lean meat and fat gives a tender
texture, good juiciness and a rich Iberian pork flavour.

Suitable for several cooking methods

Mogote can be cooked whole or divided into steaks,
medallions and smaller portions.

It is suitable for charcoal grilling, plancha,
pan-searing and low-temperature roasting
followed by a final sear.

Its shape and texture make it useful for main courses,
sharing plates and controlled restaurant portions.

Serve with roasted vegetables, potatoes, mushrooms,
peppers, herbs or full-flavoured sauces.

Thaw under refrigeration before cooking.
Do not refreeze after thawing and cook thoroughly
