Solomillo is one of the leanest and most tender
cuts of Iberian pork.

The meat has a dark red colour, limited external fat
and a fine, uniform texture.

Its mild flavour and tender structure make it suitable
for a wide range of professional kitchen applications.

Easy to portion and prepare

The piece can be cooked whole or divided into
medallions and smaller portions.

It is suitable for pan-searing, plancha, charcoal
grilling and low-temperature roasting followed
by a final sear.

Its regular shape helps provide consistent portion
sizes and controlled cooking.

Serve with mushrooms, roasted vegetables, potatoes,
herbs, mustard-based sauces or light wine reductions.

Thaw under refrigeration before cooking.
Do not refreeze after thawing and cook thoroughly
