Based in Villafranca de los Barros in Extremadura, the dairy works with raw sheep’s and goat’s milk to create cheeses ranging from irresistibly soft tortas to firm curado and añejo styles.
It is a collection built around contrasts: creamy and intense, rustic and elegant, immediately generous yet full of nuances that continue to develop on the palate.
Torta de Barros is the natural centrepiece. Beneath its rind lies a soft, spoonable interior with aromas of sheep’s milk and wild herbs, gentle acidity and the refined bitter finish created by vegetable rennet from wild cardoon.
The goat’s milk torta brings its own aromatic expression, while Curado de Barros and Añejo de Barros take the collection in a firmer, deeper direction with concentrated flavour and a lingering finish.
The collection also includes Cancho Roano D.O.P. Queso de la Serena, made from raw Merino sheep’s milk.
Together, the cheeses offer restaurants, delicatessens and specialist distributors different textures, intensities and serving possibilities within one recognisable identity.
The long list of international awards confirms the quality of the cheesemaking, but pleasure comes before medals.
