Protected by the Los Pedroches Designation of Origin, it offers fine marbling, delicate saltiness and the deep, elegant flavour expected from pure Iberian bellota ham.
This whole ham is produced from 100% Iberian pigs raised in the natural landscape of Los Pedroches.
During the montanera season, the pigs feed on acorns and natural pasture, developing the fine intramuscular fat and aromatic depth characteristic of premium bellota ham.
The Los Pedroches Designation of Origin confirms the ham’s geographical origin and its production under the requirements of the protected designation.
The whole ham with bone is suitable for hand carving in restaurants, tapas bars, hotels, delicatessen shops and specialist charcuterie counters.
Carve into thin, translucent slices and serve at room temperature to release its aroma and allow the marbled fat to soften naturally.
Present it on its own or combine it with mature Spanish cheeses, toasted almonds, olives, crusty bread and a dry fino, cava or structured red wine.
The cured meat has a deep red colour with characteristic veins of pearly-white fat and a bright appearance.
Its flavour is delicate and lightly salted, with a pleasant, characteristic aroma and a homogeneous, relatively non-fibrous texture.
