The cut consists of long, narrow strips located along the ribs and loin. It is ideal for grill, plancha, skewers and smaller restaurant portions.

Its shape and natural marbling give the meat a tender texture, good juiciness and a rich, distinctive Iberian pork flavour.
The meat has a dark red colour with visible infiltration of pearly-white fat.
Lagarto is particularly suitable for charcoal grilling, plancha and fast pan-searing.
The strips can be cooked whole, divided into smaller portions or used for skewers.
Its narrow shape allows rapid preparation and makes the cut suitable for tapas, sharing plates and tasting menus.
Serve with roasted peppers, potatoes, mushrooms, grilled vegetables, herbs or spicy sauces.
