Sobrasada de Mallorca is a traditional spreadable sausage made from pork and paprika, known for its soft texture and rich flavour. A key speciality of Mallorcan cuisine, ideal for tapas, cooking and charcuterie boards.
Sobrasada de Mallorca is one of the most distinctive products of Spanish charcuterie, originating from the Balearic Islands and deeply rooted in local culinary tradition. Made from pork meat and fat blended with paprika, it is characterised by its soft, spreadable texture and its rich, aromatic flavour. Unlike many other cured sausages, sobrasada remains soft due to its specific curing process and the use of paprika, which not only defines its colour but also its flavour profile. It can vary from mild and balanced to more intense or spicy versions, depending on the spice blend. A key element in premium sobrasada is the use of porc negre mallorquí, the native black pig of Mallorca, known for its quality meat and more structured fat, resulting in a more refined and complex product. Sobrasada is highly versatile and can be used both cold and warm. It is commonly served on bread, in tapas, with cheese or honey, or incorporated into dishes such as pasta, eggs, rice or sauces, where it adds depth and richness. Today, sobrasada holds a strong position in Mediterranean gastronomy, valued both as a traditional product and as an ingredient in modern cuisine.
