Campollano is a family-driven cheese producer based in Castilla-La Mancha, building on a strong regional foundation while taking a more open and exploratory approach to cheese.

Although the company is relatively young, it draws on generations of knowledge in Spanish cheesemaking, combining tradition with a willingness to experiment and develop new flavour profiles.

The range includes classic styles rooted in Manchego tradition, as well as cheeses produced in collaboration with external dairies under D.O.P. requirements. Alongside these, Campollano develops its own lines, where ingredients and maturation are used to shape distinct expressions.

Rather than staying within fixed categories, the approach allows space for creative development:

  • Traditional-inspired cheeses with clear regional identity
  • Flavoured cheeses, including combinations with herbs, spices, and ingredients such as chili
  • Experimental profiles, developed through ongoing testing and refinement

Not every idea is kept, but the process reflects a constant search for balance—creating cheeses that add flavour without losing their base identity.

The result is a range that feels approachable yet distinctive, where tradition is respected but not limiting.
