Compared with ham, Iberian shoulder has a slightly more concentrated character, with an expressive aroma and an attractive balance of lean meat and fat.
Its delicate saltiness and characteristic bellota flavour make it suitable for premium tapas, charcuterie boards and tasting selections.
The thin slices show the natural red colour, pearly-white fat and bright appearance of the cured shoulder.
They are arranged on a circular plate and packed in MAP – Modified Atmosphere Packaging.
Open the pack a few minutes before serving to allow the aroma to develop and the marbled fat to soften.
Serve with mature Spanish cheeses, olives, almonds, crusty bread, fino, cava or structured red wine.
