A whole green-label Cebo de Campo Iberian ham with bone, fine marbling, delicate saltiness and a smooth, balanced flavour.
Its traditional presentation makes it suitable for hand carving in restaurants, tapas bars, hotels and specialist delicatessen counters.
This whole ham is produced from 50% Iberian pigs under the official Cebo de Campo classification.
The green label identifies the Cebo de Campo category and distinguishes it from standard Cebo and Bellota Iberian products.
The ham is slowly cured to develop its characteristic aroma, balanced flavour and fine veins of pearly-white fat.
The whole ham with bone is suitable for hand carving in restaurants, tapas bars, hotels, delicatessen shops and specialist charcuterie counters.
Carve into thin slices and serve at room temperature to release the aroma and allow the marbled fat to soften naturally.
Serve it on its own or combine it with mature Spanish cheeses, olives, roasted almonds, crusty bread, tomato and red wine.
The cured meat has a red colour with characteristic veins of pearly-white fat and a bright appearance.
Its flavour is delicate and lightly salted, with a pleasant aroma and a homogeneous, relatively non-fibrous texture.
