NICO has produced cured ham in Ciudad Real since 1965. The range goes from Serrano Reserva and Gran Reserva to different Ibérico qualities – available as whole hams, boneless blocks, sliced products and smaller formats.
NICO started as a family business in 1965 and has since specialised in Spanish cured ham. Production combines traditional salting and slow maturation with modern control of the process.
The range covers several types of ham. Serrano includes Reserva and Gran Reserva, while the Ibérico selection includes cebo, cebo de campo and bellota depending on the product.
Different maturation periods make it possible to choose between a milder, more accessible ham and longer-matured products with greater depth and a more developed aroma.
NICO also produces boneless hams, blocks, portion sizes and sliced products. This makes it possible to choose the format according to use rather than being limited to a whole ham.
Part of the range is also produced without additives – including products without nitrates and nitrites – giving salt, the raw material and maturation time a greater role.
