Don Bocarte operates as a family-run producer in Cantabria, where raw material selection is central to the entire process. Fish is sourced directly, often through auctions, ensuring control from the first step and a clear link between selection and final quality.

While the structure may appear larger from the outside, the operation remains focused and closely managed, allowing decisions to stay connected to both product and process.

The range extends far beyond anchovies. Alongside Cantabrian anchovies, production includes white tuna (bonito), red tuna, squid, and other seafood, all prepared with the same attention to detail and consistency.

In recent years, the range has developed further into ready-to-use and prepared formats:

  • Croquettes and prepared dishes
  • Rice-based recipes
  • Ready seafood products requiring minimal preparation

This development reflects a clear direction—keeping the raw material at the centre, while expanding how it can be used.
