Cortijo la Fuente works from Mollina in Andalusia, where a small family setup focuses on doing things their own way—built around Pedro Ximénez as the central variety, supported by vineyards reaching 30–40 years of age.

Rather than following the strict structure of traditional regions, the approach allows for more freedom. PX is not limited to one style—it moves across formats and uses, from classic sweet wines to more accessible presentations like larger formats, and even into vermouth.

Alongside PX, smaller plantings of varieties such as Syrah and Cabernet Sauvignon broaden the range, but without shifting the core identity.

In both vineyard and cellar, the focus stays practical and hands-on. Fermentation, ageing, and blending are handled with flexibility, allowing wines to develop naturally instead of fitting into fixed categories.

The result is a range that feels different—not forced, but simply less restricted:
