Soft, exceptionally creamy and made from raw cow’s milk, this Galician cheese can do far more than sit politely on a cheeseboard.
Slice it for the counter, spread it on warm bread or let it melt into gratins, sauces and kitchen specials.
This is the traditional Galician “queso de país” at its most useful: young, gentle and so creamy that it can be enjoyed sliced or almost as a spread.
Made artisanally from raw cow’s milk, the cheese changes subtly through the seasons. The natural diet of the cooperative’s cows leaves its mark, giving each production a character that industrial cheese cannot manufacture.
Serve it with quince paste, fruit preserves or good bread, but do not stop there. Its creamy texture makes it excellent in purées, soups and sauces, while its easy melt gives gratins, vegetables and baked dishes a rich finish without overwhelming the other ingredients.
The smaller formats suit retail and cheeseboards. The large A Roda wheel gives delis and professional kitchens a serious cutting cheese with excellent possibilities for portion sales.
