Black trumpet mushrooms may appear discreet on the forest floor, but their rich aroma and concentrated flavour make them highly prized in the kitchen. Their grey-black colour creates a striking contrast, while the fine, firm flesh develops beautifully when cooked.
Sauté them with butter or olive oil for an elegant garnish, or pair them with beef, game, poultry, fish and shellfish. Their intense character adds depth to pan sauces, creamy preparations, gravies and reductions.
Add the whole mushrooms to risottos, pasta, omelettes, soups and comforting stews, or use them to bring colour and flavour to stuffings and vegetable dishes. They can also be blended into sauces for a dramatic dark finish.
