Woodland strawberries are considerably smaller than common strawberries, yet offer an intense red colour, fragrant aroma and naturally sweet flavour. Their delicate appearance and distinctive wild-fruit character bring something special to both classic recipes and modern dessert presentations.
Use them in tarts, cakes, creams and plated desserts, or add them to ice cream, fruit salads and breakfast creations. Their small size also makes them an elegant garnish, while their juicy fruit character works beautifully in coulis, jams, compotes and both hot and cold sauces.
IQF freezing keeps the strawberries separate, allowing the kitchen to use only the quantity required. They can be added directly from frozen to many preparations, reducing handling time and helping maintain flexible, controlled portions.
