Ensaladilla rusa and empanada gallega are natural starting points, but the possibilities continue with pan bagnat, tuna melts, stuffed piquillo peppers, oeufs mimosa and savoury tartlets.
The flakes also give body to tuna rillettes, sandwich spreads and the sauces for Caesar salad and vitello tonnato. Their size allows the fish to remain recognisable while blending naturally with the other ingredients.
Customers already know how to use flaked tuna. Bonito del Norte gives them a clear reason to move beyond the everyday version: a recognised Spanish speciality with a more delicate identity.
