A prized back loin that separates into delicate natural layers.
Taken from the back of the fish, the intact loin follows its natural grain. With a careful touch, the flesh separates into broad, delicate layers that give the customer control over presentation.
The distinction comes from the cut itself – not from added flavour or decorative packaging. It is Bonito del Norte presented with more structure, presence and possibility than ordinary tuna.
The loin can remain as a generous piece or be carefully separated along its natural structure. This makes it equally suited to an ensalada de tomate y bonito, salade niçoise, pan bagnat or pintxos with piquillo pepper and sweet onion.
The broad layers also create a distinctive presentation with white asparagus, artichoke hearts, roasted vegetables and elegant open sandwiches.
Enjoyed simply with its own olive oil, the fish needs little else. Sherry vinaigrette, lemon and capers or a light mustard dressing can add contrast without covering its delicate character.
The appeal becomes clear as soon as the loin is lifted from the tin and begins to separate along its natural grain. It offers an experience that standard tuna pieces and flakes cannot reproduce.
