Firm anchovy fillets with concentrated sea flavour, salinity and deep umami, preserved in extra virgin olive oil.
Serve them whole on toast, pintxos and rye bread, or use them to bring depth to Caesar dressing, mayonnaise, browned butter, vegetables and warm sauces. A small fillet that can transform everything from a simple appetiser to a composed main course.
An anchovy is small, but never a minor ingredient. Firm fillets, concentrated sea flavour and extra virgin olive oil bring salt, depth and umami to both simple servings and composed dishes.
Serve them on warm toast with tomato, roasted pepper or soft cheese, add them to pintxos, or pair them simply with olives and a glass of wine.
Place the fillets on rye bread with egg, potato and crème fraîche, or add them to a warm salad of new potatoes, mustard and dill.
Melt a fillet into browned butter for cabbage, leeks, cod or roasted root vegetables. Finely chopped, it adds depth to Caesar dressing, mayonnaise, vinaigrettes and warm sauces.
Used whole, the anchovy becomes the centre of the bite. Melted into a dressing or sauce, it works quietly as seasoning without making the dish taste strongly of fish.
These are genuine anchovy fillets, not the sweet, spiced sprats sold as “ansjos” in parts of Northern Europe. Sprats bring sweetness and spices; true anchovies bring salt, sea character and savoury depth.
