Traditionally roasted Mediterranean vegetables
Traditional Catalan‑style roasted vegetables prepared with eggplant, peppers and onion, simply dressed with olive oil.
This escalivada is made by oven‑roasting eggplant, Piquillo peppers and onion, following a traditional Catalan approach. The vegetables are gently cooked to bring out their natural sweetness and soft texture, and then lightly dressed with olive oil to preserve their pure flavour. It can be served as a ready dish, as a side to fish or meat, or used as a base ingredient in salads, tapas or other Mediterranean preparations.
