collected during Galicia’s winter months.

The limited production period, traditional farming
story and individual box give delis and cheeseboards
a seasonal cheese with something genuine to tell.

A cheese made when winter takes over

Queixo de Inverno begins with raw cow’s milk collected
from October to March, although the season may continue
when weather conditions allow.

It was traditionally known as “queso de nabiza”, after
the tender turnip leaves grown on Galician farms to feed
the cows through winter. That old, sustainable practice
is still part of the story behind this distinctly
seasonal cheese.

Give customers more than another cured cheese

This is a cheese with a clear reason to be on the
counter: a limited production season, raw milk and a
direct connection to the landscape surrounding the
Fragas do Eume Natural Park.

Serve it at room temperature, cut into wedges and then
thin slices. Its compact individually boxed format is
easy to present in speciality retail, while the winter
story creates a natural opening for recommendations,
seasonal selections and cheese gifts.

An award-winning winter speciality

Queixo de Inverno received a bronze medal at the
World Cheese Awards in 2022.
