Deep sweetness from sugar cane
Dark, glossy and full of character. Miel de Caña from Frigiliana is concentrated sugar cane syrup – molasses – with deep sweetness, caramel and a light liquorice note. A Spanish classic for savoury dishes, cheese and desserts.
Concentrated sugar cane juice, acidifier: citric acid.
Miel de Caña means sugar cane honey in Spanish, but it is not honey. It is concentrated sugar cane juice: a dark, full-bodied molasses with far more depth than ordinary syrup.
In Frigiliana, sugar cane juice is made into a thick, glossy syrup with a dark colour and rounded sweetness. Its flavour is easy to recognise, with notes of caramel, liquorice and toasted sugar.
This is not only for sweet dishes. Miel de Caña brings balance to acidity, chilli, smoke and salt. Use it when a dish needs more roundness or contrast.
The classic serving is over crisp fried aubergine. It also works in dressings, with cheese, yoghurt and fresh cheese, as a glaze for meat or fish, and in marinades. Use it naturally in cakes, biscuits, ice cream and desserts with fruit, nuts or chocolate.
