Pluma is cut from the upper part of the loin. Its thin shape makes it ideal for fast cooking on the grill, plancha or in a hot pan.

The meat has a dark red colour with visible infiltration of pearly-white fat, which helps retain juiciness during cooking.
Pluma is particularly suitable for charcoal grilling, plancha cooking and fast pan-searing.
Its thin shape allows quick and even preparation. Cook the piece whole and slice it across the grain before serving.
It can also be divided into smaller portions for tapas, tasting menus and main courses.
