The rice that turns a good stock into an unforgettable dish.

Small grain. Huge appetite.

Bomba is a short, round rice with an impressive
ability to absorb cooking liquid while remaining
firm and distinct. It can take up around five
times its own amount in liquid, drawing stock,
spices and every flavour in the pan deep into the
grain.

Paella may have made Bomba famous, but stopping
there would be a waste. Use it for lobster rice,
arroz negro, brothy mushroom rice, baked rice or
any dish where the rice should capture the sauce
without turning soft and shapeless.

Bomba rice is small, round and unusually thirsty.
As it cooks, the grain expands and absorbs a
generous amount of liquid without falling apart.
That makes it easier to build flavour directly
into the rice instead of leaving it floating
around the plate.

It is the obvious choice for paella, but it is
equally at home in arroz caldoso, lobster rice,
arroz negro, oven-baked rice and bold one-pan
dishes with vegetables, seafood or meat. Give it
a serious stock, a proper sofrito and enough time,
and the rice takes care of the rest.

Grown where rice has to work harder

These grains come from the high rice fields of
Aragón, irrigated with cold meltwater from the
Pyrenees. The area is cooler than Spain’s
traditional rice-growing regions, so the grain
ripens more slowly.

That does not make the rice complicated. Quite
the opposite. It gives you a grain made for
generous flavours, plenty of liquid and dishes
where the rice must keep its shape right until
the last spoonful.

The producer recommends around 15 minutes of
cooking followed by 5 minutes of resting. Treat
that as a starting point—the pan, heat and amount
of liquid will always have the final word.
