Juan Pedro Domecq is a specialist producer of 100% Iberian pork from its own mamellada-lampiña genetic line.
Its identity is closely linked to the dehesa, Cortegana, Jabugo and Huelva, combining long-term breeding work with control throughout production.
The Juan Pedro Domecq story goes beyond a standard Iberian quality classification.
It began in 1970, when Juan Pedro Domecq Solís started a focused breeding programme at the Lo Álvaro estate.
The aim was to develop and stabilise an own line of 100% Iberian mamellada-lampiña pigs.
The programme continued over many years and included collaboration with Spanish universities to study, document and strengthen the characteristics of this rare Iberian line.
The mamellada-lampiña pig is dark, almost hairless and recognised by two characteristic folds beneath the neck.
More importantly, it was selected for qualities that matter in high-level Iberian production: adaptation to outdoor rearing, efficient use of the dehesa and the ability to develop fine fat infiltration.
The animals are raised across extensive areas of dehesa and live for approximately 1.9 years.
During the montanera, they may spend up to around four months moving freely through the landscape, feeding on natural resources and fallen acorns.
This extended period gives the pigs time to move, forage and gradually develop the infiltration that characterises the producer’s raw material.
The estate also raises fighting bulls. On parts of the dehesa, pigs and bulls can graze peacefully within the same open livestock landscape.
Juan Pedro Domecq maintains close control over the complete chain, from breeding and rearing to slaughtering, processing and curing.
This vertical approach provides detailed knowledge of every stage and supports consistency, traceability and control of the raw material.
The secadero is located in Cortegana, approximately 15 kilometres west of Jabugo, in an area strongly associated with Spain’s finest Iberian products.
The first products from the breeding project were introduced commercially in 2000 by Juan Pedro Domecq Morenés, building on the work started by his father.
Today, the producer stands apart through its own genetics, extensive dehesa rearing, bellota feeding, fat infiltration and complete production control.
It is a precise and recognisable Iberian identity, rooted in the dehesa and closely connected to Cortegana, Jabugo and Huelva.
