Slow-Cooked Sofrito with Rustic Spoonable Texture

Its rich, spoonable texture and rounded flavour work beautifully with pasta, rice, eggs, meatballs, vegetables and baked dishes.
This special recipe is inspired by the tomato sauces traditionally prepared at home with patience and simple ingredients.
Its familiar flavour recalls tomato slowly cooked in a pan by earlier generations.
Unlike completely smooth tomato sauces, this preparation has a substantial texture with small, visible pieces of tomato.
The result holds well on pasta, toasted bread, rice dishes and plated preparations.
Onion, green pepper and garlic are cooked gently to form an aromatic sofrito before being combined with the tomato.
Olive oil and selected spices add richness and depth without the use of thickeners.
Brown cane sugar softens the tomato’s natural sharpness and contributes a rounded, well-integrated flavour.
The sauce remains distinctly tomato-led, with the vegetables adding complexity rather than covering its character.
