Judión beans are a large white bean variety traditionally associated with the area of La Granja in central Spain. Despite their size, they are known for their refined texture and soft, almost buttery mouthfeel once cooked. The skin is fine and barely noticeable, allowing the beans to remain intact while developing a creamy consistency. They are commonly used in classic Spanish stews such as judiones estofados, where their structure absorbs flavour without breaking down. Judión beans work particularly well in slow‑cooked dishes with vegetables, meats or rich broths, where the bean itself plays a central role.
