Presa from 100% Iberian bellota pork, with generous marbling, a tender texture and rich flavour.
Presa is cut from the upper shoulder area near the loin. It is suitable for grilling, roasting, pan-searing and portioning for restaurant service.
Presa is a naturally marbled cut taken from the upper shoulder area, close to the loin.
Its combination of lean meat and intramuscular fat gives it a tender texture, good juiciness and a rich, distinctive pork flavour.
The meat has a dark red colour with visible veins of pearly-white fat.
Cook the piece whole or cut it into steaks, medallions or smaller portions.
It is particularly suitable for charcoal grilling, plancha cooking, pan-searing and low-temperature roasting followed by a final sear.
The cut works well with roasted vegetables, potatoes, mushrooms, peppers, herbs and full-flavoured sauces.
Each piece weighs approximately 600 g and is individually vacuum packed.
The carton contains approximately 5 kg, making the product suitable for flexible portioning and controlled use in professional kitchens.
Thaw under refrigeration before cooking. Do not refreeze after thawing and cook thoroughly before serving.
