Galicia’s unmistakable cheese – gentle, creamy and impossible to overlook.
Queixo Tetilla is one of Galicia’s great cheese classics, instantly recognised by its distinctive silhouette.
Made from raw cow’s milk, it has a soft, gently creamy texture and a mild flavour that makes it easy to introduce, serve and sell.
Few cheeses create recognition before they have even been cut. Queixo Tetilla does exactly that. Its characteristic shape makes it a natural eye-catcher on cheese counters, buffets and cheeseboards.
Campo Capela makes its D.O.P. Tetilla from raw cow’s milk. Beneath the firm straw-yellow rind is a soft, ivory-coloured paste with a gently creamy texture and a mild flavour carrying delicate acidic and lightly salty notes.
Cut the cheese lengthwise from top to base so every portion includes some rind and retains the distinctive Tetilla profile.
Quince paste is the Galician classic, but tomato or pepper preserves bring a more savoury contrast. Its gentle flavour and easy melt also make it excellent for toast, fillings and smooth sauces.
Remove it from refrigeration around one hour before serving to let the texture soften and the flavour open fully.
