Works naturally in preparations where clarity of flavour and structure are required. It can be presented in clean cuts for cheese boards, tapas or shared plates, where its firm texture allows precise slicing and a defined visual expression. It performs well in dishes such as pan con tomate with aged cheese, croquetas de queso, or warm potato dishes, where the flavour opens slightly when heated. It can also be shaved over salads with nuts or bitter leaves, or used in pasta, gratin dishes or roasted vegetables, adding depth without excess heaviness.
