Produced artisanally from raw Manchega sheep’s milk and matured for approximately ten months, this Añejo Selección represents the pinnacle of the 1605 range. Only cheeses that achieve near‑perfect balance throughout extended ageing are selected. The texture is firm and compact with fine crystalline and granular notes, while the flavour delivers powerful savoury intensity layered with nutty, slightly spicy and caramelised undertones. A long, persistent finish defines this cheese, making it ideal for cheese professionals, premium retail and gastronomic applications where maturity and character are essential.
