Authentic Spanish Paella Rice
Rice is a central part of Spanish gastronomy, and the choice of variety has a direct influence on texture, yield and final presentation.
This semi-long Japonica rice is valued for its ability to absorb broth while keeping the grain well defined. For paella, 1 kg of rice will typically require around 3 to 3.5 litres of stock, depending on heat, pan size and cooking style.
That absorption gives strong flavour development and a generous finished volume, while the grain structure helps the dish remain moist without becoming heavy or sticky.
It is a natural choice for Paella Valenciana, Paella de Marisco, Arroz a Banda and other Spanish rice dishes where the rice must carry the flavour of the broth.
Maratelli belongs to the traditional Japonica rice family, valued for its ability to combine flavour absorption with excellent grain definition. Rather than dominating the dish, the rice allows the broth, saffron, seafood, meat or vegetables to become the natural centre of attention.
Cultivated in northern Spain using clean mountain water from the Pyrenees, the grains develop under favourable conditions that support uniform quality and dependable cooking performance. These characteristics have made the variety a trusted choice in Spanish kitchens for many years.
Another reason for its popularity is its versatility. It is equally at home in Paella Valenciana, Arroz a Banda, Arroz Negro, Arroz Caldoso, Arroz con Bogavante and Arroz al Horno. By adjusting the liquid ratio, the same rice also performs beautifully in Arroz Meloso and traditional risotto.
