The use of large, selected anchovy fillets reflects a level of raw material quality that is increasingly difficult to source. Each fillet is defined by its size, structure and consistency, offering a cleaner, more pronounced texture than standard formats. This allows the product to take a central role in the dish, rather than acting as a background element. The fillets lend themselves naturally to preparations where the ingredient is clearly visible and allowed to stand on its own. They work particularly well in dishes such as pan con tomate with anchovies, gildas, anchovy toast with butter, salads with bitter leaves, or simply served with roasted vegetables and citrus. The size and structure also make them suitable for more composed plates, where fewer pieces are needed to create visual impact and flavour balance. The combination of traditional curing and high‑quality olive oil creates a defined and stable profile, where intensity is balanced by texture and fat.
