Paper-Thin Flesh with Deep Fire-Roasted Flavour
A hidden treasure from the Ebro Valley, prized for flesh so fine and delicate it inspired the name Cristal pepper.
Roasted over beechwood and peeled without water, it brings intense pepper flavour and a soft texture to tapas, salads, fish and meat dishes.
Cristal pepper is one of the lesser-known treasures of Spanish gastronomy.
Its exceptionally fine flesh is almost translucent, giving the pepper its distinctive name and creating a soft, delicate texture unlike thicker varieties.
Rosara receives the peppers fresh from the fields and roasts them over beechwood to develop their natural sweetness and deep roasted character.
They are then peeled without water, preserving the flavour created during roasting rather than washing away the pepper’s aromatic juices.
The jar contains entreverado peppers: a natural mix of red and green peppers harvested at the point where flavour and texture are at their best.
This gives every serving colour, contrast and a lively balance between sweetness and fresh, vegetal character.
Serve simply with extra virgin olive oil, flaked salt and a little garlic.
Use them on toasted bread with anchovies, tuna or goat’s cheese, or add them to salads, Spanish tortillas and cold vegetable plates.
They also make an excellent partner for grilled steak, roast lamb, white fish, cod, octopus and other seafood dishes.
For a warmer presentation, briefly heat them in their own juices and finish with olive oil, fresh herbs or a light vinaigrette.
